Fluffy GF & Vegan Biscuits (Top 9 Free!)

  • ⅓ cup chilled palm fruit oil (I use Spectrum brand)

  • 1 cup + 2 tbsp cold water

  • 1 ½ tbsp chilled agave nectar

  • Extra melted palm fruit oil for brushing

Instructions

1️⃣ Prepare the Dough

  • Add all dry ingredients to a mixing bowl and mix on low for about 1 minute to evenly distribute.

2️⃣ Incorporate the Palm Oil

  • Add in ⅓ cup chilled palm fruit oil, breaking it into small teaspoon-sized chunks as you go.

  • Continue mixing on low to blend the oil into the flour.

3️⃣ Hydrate the Dough

  • Slowly pour in cold water and chilled agave nectar while the mixer is running on low.

  • Once combined, increase the speed slightly and mix until the dough is shaggy (not smooth, but with most of the flour incorporated). This may take 1-2 minutes.

4️⃣ Shape the Biscuits

  • Lightly flour a clean surface with pastry blend.

  • Turn the dough out and lightly flour your hands.

  • Gently pat the dough down until it's ½ - ¾ inch thick.

  • Use a biscuit cutter to cut out 6-8 biscuits, depending on the size of your cutter.

5️⃣ Bake to Perfection

  • Place biscuits on a parchment-lined cookie sheet, making sure they are touching each other (this helps them rise tall instead of spreading).

  • Brush the tops with melted palm oil.

  • Bake at 350°F for 10-12 minutes, then rotate the tray and bake for another 10-12 minutes.

  • The biscuits are ready when the center biscuits are golden brown and firm to the touch.

6️⃣ Serve & Store

  • Store leftovers at room temperature for 2 days or freeze for up to 1 month.
