Ingredients
Dry Ingredients
2 ½ cups my signature pastry blend
1 tbsp + 1 tsp baking powder
1 tsp egg replacer powder
1 ½ tsp salt
⅔ tsp xanthan gum
Wet Ingredients
⅓ cup chilled palm fruit oil (I use Spectrum brand)
1 cup + 2 tbsp cold water
1 ½ tbsp chilled agave nectar
Extra melted palm fruit oil for brushing
Instructions
1️⃣ Prepare the Dough
Add all dry ingredients to a mixing bowl and mix on low for about 1 minute to evenly distribute.
2️⃣ Incorporate the Palm Oil
Add in ⅓ cup chilled palm fruit oil, breaking it into small teaspoon-sized chunks as you go.
Continue mixing on low to blend the oil into the flour.
3️⃣ Hydrate the Dough
Slowly pour in cold water and chilled agave nectar while the mixer is running on low.
Once combined, increase the speed slightly and mix until the dough is shaggy (not smooth, but with most of the flour incorporated). This may take 1-2 minutes.
4️⃣ Shape the Biscuits
Lightly flour a clean surface with pastry blend.
Turn the dough out and lightly flour your hands.
Gently pat the dough down until it's ½ - ¾ inch thick.
Use a biscuit cutter to cut out 6-8 biscuits, depending on the size of your cutter.
5️⃣ Bake to Perfection
Place biscuits on a parchment-lined cookie sheet, making sure they are touching each other (this helps them rise tall instead of spreading).
Brush the tops with melted palm oil.
Bake at 350°F for 10-12 minutes, then rotate the tray and bake for another 10-12 minutes.
The biscuits are ready when the center biscuits are golden brown and firm to the touch.
