Gluten-Free & Vegan Focaccia – Allergen-Free & Full of Flavor!


Fluffy, chewy, and packed with herby goodness—this gluten-free, vegan, and top 9 allergen-free focaccia is about to become your new favorite bread! Instead of the traditional kneading and rising process, this easy batter-based focaccia gets scooped straight into a pan, spread out, and baked to golden perfection.

Topped with olive oil, red onion, basil, and oregano, it’s rich in flavor and pairs beautifully with pasta dishes or makes the perfect panini bread.

Dry Ingredients

  • 5 cups my signature bread blend

  • 4 tsp xanthan gum

  • 2 ½ tsp salt

  • 2 T yeast

  • 3 tsp egg replacer powder


    Wet Ingredients

  • 3 cups hot water

  • 4 tbsp agave nectar

  • 1/2 cup olive oil (plus extra for drizzling)

Toppings

  • ¼ cup olive oil (more if you’re feeling it)

  • ½ cup thinly sliced red onion

  • 1 tbsp dried basil

  • 1 tbsp dried oregano

Instructions

  1. Make the Batter

    • In your stand mixer or a large bowl, mix together the dry ingredients on low speed for about two minutes.

    • While on low speed, add the wet ingredients.

    • Once incorporated, turn mixer up to medium high speed and beat 1-2 full minutes until a smooth, thick batter forms.

  2. Spread the Batter

    • Line a sheet pan with parchment paper and grease lightly with olive oil.

    • Scoop the batter into the pan and spread it evenly with a spatula.

    • Tip: If you dip the spatula in water a few times, it makes the batter easier to spread.


  3. Add the Toppings

    • Drizzle olive oil evenly over the top. The more the better. Like, a ridiculous amount.

    • Sprinkle on the red onion, basil, and oregano.

  4. Bake

    • Preheat the oven to 375°F

    • Bake for 38 minutes, turning the pan halfway through for even baking.

    • Bread should be golden brown in the middle, not just at the edges.


  5. Cool & Serve

    • Let cool slightly, then cut into squares. Serve warm or at room temperature.
